  • 1 tablespoon light butter
  • ¼ cup stone-ground cornmeal
  • Cooking spray
  • ½ cup chopped green bell pepper
  • ½ cup chopped onion
  • ¼ teaspoon salt
  • 4 (4-ounce) skinless, boneless chicken breast halves
  • + 5 more ingredients
    • 1/8 teaspoon black pepper
    • 1/3 cup fat-free, less-sodium chicken broth
    • 1 cup frozen whole-kernel corn, thawed
    • 1 ½ teaspoons Cajun seasoning
    • 1 teaspoon cornstarch

Place cornmeal and seasoning in a zip-top plastic bag; add chicken. Seal and shake well to coat. Melt butter in a large skillet over medium- high heat.
