Pancetta and Swiss Chard with Soft Polenta

  • 1 tablespoon chopped fresh or 1 teaspoon dried thyme
  • 2 tablespoons minced garlic
  • 8 cups coarsely chopped Swiss chard
  • ¼ teaspoon black pepper
  • 2 cups Soft Polenta
  • 2 ounces pancetta, cut into 1/4-inch pieces
  • ¼ cup (1 ounce) shaved fresh Parmesan
  • + 3 more ingredients
    • Cooking spray
    • 1 ½ cups fat-free, less-sodium chicken broth
    • ¼ teaspoon sea salt

Cook pancetta in a large skillet coated with cooking spray over medium heat until crisp (about 10 minutes). Remove pancetta from pan. Add garlic to drippings in pan; sauté 30 seconds.
