Ingredients

  • ¼ cup chopped fresh cilantro
  • ½ teaspoon ground cumin
  • 4 cups fat-free, less-sodium chicken broth
  • ¼ teaspoon ground coriander
  • ¾ cup reduced-fat creamy peanut butter
  • 1 cup chopped onion
  • ½ teaspoon salt
  • + 5 more ingredients
    • 2 tablespoons tomato paste
    • 4 cups (1/2-inch) cubed peeled butternut squash
    • 1 ½ teaspoons peanut oil
    • 2 tablespoons minced garlic (about 6 cloves)
    • ½ teaspoon crushed red pepper
