Penne with Chicken, Shiitake Mushrooms, and Capers

Ingredients

  • 4 large garlic cloves
  • ¼ cup fresh parsley
  • Freshly grated Parmesan cheese
  • 2 tablespoons capers
  • 1 ½ pounds fresh shiitake mushrooms
  • 1 ½ pounds skinless boneless chicken breast halves
  • ½ cup dry white wine
  • + 6 more ingredients
    • 1 ½ teaspoons fresh rosemary
    • 1 pound penne pasta
    • All purpose flour
    • 1 large red onion
    • 7 tablespoons olive oil
    • 2 ½ cups low-salt chicken broth

Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add onion and sauté until golden brown, about 10 minutes. Transfer to medium bowl. Add 2 tablespoons oil to pot.
