Ingredients

  • 8 cups reduced-sodium chicken broth
  • 1 cup carrots
  • 6 ounces rice noodles
  • 1 star anise
  • 1 pound boneless, skinless chicken breasts
  • 3 whole cloves
  • 4 basil
  • + 7 more ingredients
    • 1 red bell pepper
    • 1 lime
    • 2 tablespoons fresh cilantro
    • 1 tablespoon fresh lime juice
    • 1 piece ginger (1/2 inch thick)
    • 1 ½ cups snow peas
    • ½ cup scallions

Boil noodles in salted water for 3 minutes. Place snowpeas and carrots in a colander; drain noodles over them; rinse; divide among 4 bowls.
