Poached Chicken and Asparagus Salad

Ingredients

  • 1 bay leaf
  • ¼ cup Apple-Kiwi Dressing
  • 1 cup yellow bell pepper strips
  • 2 ½ cups (1-inch) slices asparagus
  • 2 tablespoons fresh lemon juice
  • ½ pound skinless, boneless chicken breast
  • 1 small onion, halved
  • + 7 more ingredients
    • 1 cup yellow bell pepper strips
    • ½ teaspoon salt
    • 1 teaspoon finely chopped fresh tarragon
    • ¼ cup Apple-Kiwi Dressing
    • 1 teaspoon finely chopped fresh tarragon
    • ½ teaspoon cracked black pepper
    • 6 cups water

Combine first 6 ingredients in a large saucepan; bring to a boil. Cook 5 minutes. Add chicken. Cover, reduce heat, and simmer 15 minutes or until chicken is tender.
