Ingredients

  • 1 tablespoon fresh thyme
  • 6 garlic cloves
  • 6 cups (or more) low-salt chicken broth
  • 1 cup onion
  • 2 tablespoons fresh thyme
  • 4 fresh bay leaves
  • Shredded braised chicken (from recipe above)
  • + 13 more ingredients

    • 1 cup celery
    • 2 tablespoons fresh Italian parsley
    • 3 tablespoons fresh tarragon
    • 1 cup butter
    • plus 4 large thyme sprigs
    • 1 5-pound whole chicken (preferably organic)
    • 1 cup dry white wine
    • 1 ½ cups shallots
    • 1 cup carrot
    • 4 tablespoons extra-virgin olive oil
    • Crusty country bread slices or baguette slices
    • 2 tablespoons fresh chives

Combine 2 tablespoons oil, 2 tablespoons chopped thyme, and 2 chopped bay leaves in small bowl. Rub herb mixture all over chicken; sprinkle with salt and pepper. Cover and chill overnight.
