Pumpkin Chipotle Pasta Sauce

Ingredients

  • 2 chipotle peppers in adobo sauce, chopped
  • 1 cup pumpkin puree
  • 1 cup chicken broth
  • 1 clove garlic, minced
  • 3 tablespoons minced sweet onion
  • 1 tablespoon unsalted butter
  • 1 pinch ground nutmeg

    • 1 pinch ground cinnamon
    • ¼ teaspoon ground coriander
    • ¾ teaspoon salt
    • 1 teaspoon ground sage
    • 1/3 cup low-fat milk

1. Melt butter in a saucepan over medium heat, and cook and stir the onion and garlic until the onion is translucent, about 3 minutes.
