Quick Coq au Vin
Ingredients
- 1 handful flour
- 3 tablespoons olive oil
- 2 thick slices bacon
- 1 4-pound chicken
- 1 cup chicken broth
- 1 bay leaf
- 2 sprigs thyme

- 1 clove garlic
- 20 baby carrots
- salt
- 2 large sweet onions, or 2 cups pearl onions
- 10 ounces button or cremini mushrooms
- freshly ground black pepper
1. Heat the olive oil in a large pot over medium-high heat. Add the bacon and cook until crisp. Transfer to a large plate. 2. Shake the chicken pieces with the seasoned flour in a paper or plastic bag. 3. Brown the chicken in the pot, 4 to 5 minutes per side. Transfer to the plate with the bacon....
