Quick Corn Chowder Recipe

Ingredients

  • 1 bacon strip, diced
  • 1 medium onion, chopped
  • 1 can (14-½ ounces) chicken broth
  • 2 cups water
  • 2 large potatoes, peeled and diced
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 cup milk, divided
  • + 4 more ingredients
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • ¼ cup all-purpose flour
    • Chopped fresh parsley, optional

1. In a large saucepan, cook bacon until crisp. Using a slotted spoon, remove to paper towel to drain. Saute onion in drippings until tender. Add the broth, water and potatoes; bring to a boil.
