Quinoa Crusted Chicken Fingers


  • 2 lbs boneless skinless chicken breasts, sliced into 3-inch long tenders (or buy chicken tenders)
  • 1 teaspoon salt
  • 2 teaspoons garlic powder
  • 2 teaspoons fresh ground black pepper
  • 2 teaspoons paprika
  • 2 cups cooked red quinoa or 2 cups white quinoa
  • 2 cups white quinoa

    • ½ cup whole wheat breadcrumbs or ½ cup seasoned breadcrumbs
