Quinoa With Spinach, Artichokes and Chicken - A Family Feast

Ingredients

  • 1 14-ounce can whole artichokes, drained and cut into quarters
  • 2 tablespoons corn starch
  • 1 ½ cups shredded mozzarella, divided
  • 1 cup grated Parmesan divided
  • ½ cup grated Romano cheese
  • 8 ounce package cream cheese
  • 1 cup heavy cream
  • + 10 more ingredients
    • ¼ teaspoon freshly ground black pepper
    • ½ teaspoon salt
    • 8 ounces fresh baby spinach
    • 1 ½ pounds boneless skinless chicken breasts cut into one inch pieces
    • 1 ½ tablespoons chopped garlic
    • 2 cups diced onion
    • 1 tablespoon extra-virgin olive oil
    • 3 tablespoons butter
    • 1 cup quinoa
    • 2 cups chicken stock

Bring chicken stock to a boil in a small to medium sauce pan. Add quinoa, reduce to medium low, cover and cook 12 minutes on a low boil. Remove from heat, leave cover on and time 15 more minutes.
