Ingredients

  • Sage sprigs (optional)
  • 1 cup (4 ounces) finely chopped fresh mozzarella cheese
  • ½ cup dry white wine
  • 2 ounces prosciutto, chopped (about 1/3 cup)
  • 1 ½ to 2 tablespoons finely chopped fresh sage
  • 1 tablespoon butter
  • 2 garlic cloves, minced

    • ¼ teaspoon salt
    • 1 ¼ cups Arborio rice
    • 1 cup finely chopped leek
    • ¼ teaspoon freshly ground black pepper
    • 2 (14-ounce) cans fat-free, less-sodium chicken broth
