Savory Beer Rice


  • ½ stick butter or margarine, melted
  • ½ c onion, chopped
  • ½ c green bell pepper, chopped (for more color use 1/4 cup yellow and 1/4 cup of red bell pepper)
  • 2 c chicken stock (or 2 cups boiling water)
  • 1 c long-grain rice
  • ¾ c beer
  • ½ t salt
  • + 2 more ingredients
    • ¼ t pepper (more to taste)
    • ¼ t ground thyme or marjoram

Heat butter in deep saucepan; saute onion and green pepper until tender but not brown. Add chicken stock or bouillon. Stir in rice, beer, salt, pepper and thyme. Bring to a boil; cover. Reduce heat; simmer until all liquid is absorbed, 30 to 35 minutes. Recipe reprinted with permission from ...
