Savory Beer Rice
Ingredients
- ½ stick butter or margarine, melted
- ½ c onion, chopped
- ½ c green bell pepper, chopped (for more color use 1/4 cup yellow and 1/4 cup of red bell pepper)
- 2 c chicken stock (or 2 cups boiling water)
- 1 c long-grain rice
- ¾ c beer
- ½ t salt
- + 2 more ingredients

- ¼ t pepper (more to taste)
- ¼ t ground thyme or marjoram
Heat butter in deep saucepan; saute onion and green pepper until tender but not brown. Add chicken stock or bouillon. Stir in rice, beer, salt, pepper and thyme. Bring to a boil; cover. Reduce heat; simmer until all liquid is absorbed, 30 to 35 minutes. Recipe reprinted with permission from ...
