Ingredients

  • ½ teaspoon dried oregano
  • 1 teaspoon Creole (or Old Bay) seasoning
  • 3 14 1/2-ounce cans chicken broth
  • 1 tablespoon dried thyme
  • 4 scallions, finely chopped (1/2 cup)
  • 1 small onion, chopped (1/2 cup)
  • 2 tablespoons all-purpose flour

    • 1 tablespoon salt
    • ¼ teaspoon pepper
    • ½ green bell pepper, cored, seeded, and chopped (1/2 cup)
    • ½ teaspoon dried basil
    • 1 teaspoon Worcestershire sauce
    • 1 medium stalk celery, chopped (1/2 cup)
    • 1 tablespoon olive oil
    • ¼ cup chopped fresh parsley
    • 1 28-ounce can crushed tomatoes
    • 1 11-ounce bag frozen okra
    • ½ pound shrimp (peeled and deveined), cut into thirds
    • ¼ pound Italian sweet or spicy sausage, sliced
    • ½ pound crabmeat
    • 1 bay leaf

Place the sausage in a saucepan and fill with water to cover. Bring to a boil and cook for 3 to 4 minutes. Drain and set aside. In a large pot over medium-high heat, heat the oil.
