Shrimp, Sausage and Quinoa Jambalaya

Ingredients

  • 4 ½ c lower-sodium chicken broth, divided
  • 2 c quinoa (12 ounces)
  • 1 T olive oil
  • ½ lb smoked turkey kielbasa, sliced in 1/4-inch rounds
  • 1 large onion, chopped
  • 1 red bell pepper, thinly sliced
  • 4 clove garlic, peeled and chopped
  • + 4 more ingredients
    • 1 c spicy V-8 juice
    • 1 lb medium shrimp, peeled and deveined
    • 1 c grape tomato halves
    • 1 c frozen peas
