Simple Chicken and Oat Groat Soup

Ingredients

  • 4 cups fat-free, less-sodium chicken broth
  • 1 ½ cups chopped onion
  • 1 tablespoon olive oil
  • 2 teaspoons chopped fresh thyme
  • 1 cup chopped celery
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 cup diced zucchini
  • + 9 more ingredients
    • 2 garlic cloves, minced
    • ½ teaspoon salt
    • ¾ cup chopped carrot
    • 1 cup uncooked oat groats
    • 2 ½ cups water
    • 1 cup (1-inch) cut green beans
    • 1/3 cup chopped fresh basil
    • 1 cup frozen green peas, thawed
    • 2 cups chopped skinless, boneless rotisserie chicken breast

Combine 2 1/2 cups water and groats in a large saucepan; bring to a boil. Reduce heat, and simmer 45 minutes or until tender (do not overcook). Drain; wipe pan with a paper towel.
