Ingredients

  • 1 cup grated Parmesan
  • 4 cups low-sodium chicken broth
  • 1 cup dry white wine
  • 2 cups Arborio rice
  • ¼ teaspoon black pepper
  • 1 small yellow onion, finely chopped
  • 2 tablespoons unsalted butter
  • + 1 more ingredients
    • 1 teaspoon kosher salt

Melt the butter in a large saucepan over medium heat. Add the onion and cook for 3 minutes. Add the rice and cook, stirring constantly, for 2 minutes. Reduce heat to medium-low.
