Skillet Ground Chicken And Eggplant

Ingredients

• 1 lb ground chicken
• 1 small onion, chopped
• 1 small green pepper, chopped
• ½ t basil
• ½ t oregano
• ½ t chili powder
• 1 t salt, divided

  • ¾ c water
  • 1 (8 ounces) can tomato sauce
  • 1 eggplant (1 pound), cut in 1/2-inch slices
  • 1 c shredded Monterrey Jack cheese
