    • 21 avocado, diced
    • 1 tablespoon minced chipotle chiles in
    • ¼ cup lime juice
    • 1 (15-ounce) can
    • Salt and freshly ground black pepper
    • 4 pounds skinless chicken thighs
    • 1 cup chopped carrots
    • 1 cup chopped celery
    • 1 cup sliced onion
