Smoked-Sausage and Okra Dirty Rice

Ingredients

  • 6 scallions
  • 1 medium red bell pepper
  • 2 large garlic cloves
  • 2 tablespoons vegetable oil
  • 1 pound smoked hot pork sausage links
  • ½ pound okra
  • 2 medium onions
  • + 6 more ingredients
    • 1 medium green bell pepper
    • 2 ½ cups long-grain white rice
    • 4 ¼ cups water
    • 1 ½ teaspoons salt
    • ½ teaspoon black pepper
    • 1 ¾ cups low-sodium chicken broth

Bring 4 cups water to a boil in a 4-quart heavy saucepan, then add rice and 1/2 teaspoon salt and cook, covered tightly, over low heat until water is absorbed and rice is tender, about 20 minutes.
