Smoky Squash Soup


  • 1 tablespoon(s) fresh sage leaves, finely chopped or 1 teaspoon dried
  • 2 pound(s) butternut or other smooth-skinned squash
  • salt and pepper to taste
  • 1 onion
  • 1 apple
  • 2 tablespoon(s) butter
  • ¼ teaspoon(s) cardamom (optional)

    • 4 cup(s) chicken stock, or half stock and half water
    • 1 cup(s) grated smoked cheddar cheese
    • ½ cup(s) cream (optional)
    • 1 pinch(s) cayenne pepper

Cut squash in half lengthwise, remove seeds and stringy pulp, peel and cut into cubes. Dice onion; peel, core and dice apple. Press or mince garlic.
