Smothered Chicken Meatball PoBoys

Ingredients

  • 6 slice provolone cheese
  • 12 thin slices Creole tomatoes
  • 3 c shredded lettuce
  • 6 T mayonnaise
  • 6 T Creole mustard
  • 6 PoBoy buns
  • 1 green bell pepper, seeded and cut into 1/4 inch strips
  • + 17 more ingredients
    • 1 red bell pepper, seeded and cut into 1/4 inch strips
    • 2 c chicken broth
    • 2 t Creole seasoning
    • 3 yellow onions, thinly sliced
    • ¼ c flour
    • ¼ c vegetable oil
    • 1 t ground pepper
    • ½ t cayenne
    • 1 t salt
    • 2 T chopped parsley
    • 1 egg, beaten
    • ½ c Italian bread crumbs
    • ½ c chopped celery
    • ½ c chopped red bell pepper
    • 3 clove garlic, minced
    • 1 shallot, chopped
    • 2 lb boneless, skinless chicken thighs, cut in 1 inch cubes

In a large food processor, combine the chicken thighs, shallot, garlic, chopped red bell pepper, and chopped celery. Process until finely chopped and well combined.
