Ingredients

  • ¾ pound chicken livers, boiled and ground
  • 3 cups broth from gizzards and livers
  • 1 large bell pepper, chopped
  • ¾ pound ground pork sausage
  • 4 stalks celery, chopped
  • ½ cup parsley, chopped
  • ½ cup green onion, chopped
  • + 5 more ingredients
    • 1 large onion, chopped
    • 1 cup Mahatma or Carolina White Rice
    • ½ cup dark brown roux *
    • ¾ pound chicken gizzards, boiled and ground
    • salt, pepper, and cayenne pepper to taste
