SpanishStyle Chicken with Saffron Rice Arroz con Pollo

Ingredients

  • 1 tablespoon olive oil
  • ½ cup pimiento-stuffed green olives
  • ¾ teaspoon saffron threads
  • 1 (14 oz)tomatoes including juice
  • 4 garlic cloves
  • 1 large onion
  • fresh flat-leaf parsley

    • 1 ¾ cups chicken broth
    • 2 cups long-grain white rice
    • 1 ¼ cups dry white wine
    • 1 3 1/2- 4 lb chicken
    • 2 teaspoons paprika
    • large red bell pepper
    • 1 cup frozen peas
    • 1 bay leaf (not California)
