Spiced Brown Basmati Pilaf

Ingredients

  • ½ cup golden raisins
  • 1 cup chopped onion
  • 3 whole cloves
  • 2 (14 1/2-ounce) cans fat-free, less-sodium chicken broth
  • 1 cup water
  • 2 cups uncooked brown basmati rice
  • ¼ cup chopped pistachios
  • + 4 more ingredients
    • 2 tablespoons tomato paste
    • 1 (3-inch) cinnamon stick
    • 1 tablespoon vegetable oil
    • 1 teaspoon salt

Heat oil in a large nonstick skillet over medium heat. Add onion; cook 10 minutes or until golden, stirring frequently. Add rice, raisins, cloves, and cinnamon; stir well. Stir in water, tomato paste, salt, and broth; bring to a boil. Cover, reduce heat, and simmer 45 minutes. Let stand 5 minutes...
