Spiced Couscous Pilaf with Almonds, Currants & Mint

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 small onion, finely diced (about ¾ cup)
  • ¼ cup slivered almonds, toasted
  • 1 tablespoon fresh lemon juice; more to taste
  • 2 teaspoons ground cumin
  • 1/3 cup chopped fresh mint
  • ¾ teaspoon kosher salt
  • + 6 more ingredients
    • Pinch ground cinnamon
    • 1-¾ cups homemade or low-salt canned chicken broth (one 14-ounce can)
    • 1 cup medium-grain (Moroccan) couscous
    • ½ teaspoon ground turmeric
    • ¼ cup dried currants
    • 1 teaspoon ground coriander
