Spicy & Citrusy Couscous Salad

Ingredients
- 2 cups vegetable broth, low-salt chicken broth, or water
- Kosher salt and ground white pepper
- ½ cup sliced almonds, lightly toasted
- 1 small yellow onion, cut into small dice
- ¼ cup plus 3 Tbs. extravirgin olive oil
- 1 pinch saffron threads (optional)
- ½ tsp. finely grated orange zest
- + 8 more ingredients

- ¼ cup coarsely chopped fresh flat-leaf parsley
- 1 small red bell pepper, seeded and cut into small dice
- ½ cup thinly sliced scallions
- ¼ cup fresh orange juice
- ¼ cup dried currants
- ¾ tsp. harissa or 2 to 3 dashes of hot sauce, such as Tabasco
- 1-½ tsp. sweet paprika
- 1 cup couscous
In a medium saucepan, bring the broth or water, paprika, saffron (if using), harissa or hot sauce, 1/2 tsp. salt, and a pinch of white pepper to a boil over medium heat.
