Spicy Chicken and Pasta Stew


  • 4 ounces bow tie or penne pasta, uncooked
  • 2 teaspoons minced garlic (about 4 cloves)
  • ¾ pound skinned, boned chicken breast halves
  • 2 cups tightly packed torn fresh spinach leaves
  • ½ teaspoon dried crushed red pepper
  • 2 teaspoons olive oil
  • ¼ cup grated Parmesan cheese

    • 1 (14 1/2-ounce) can Italian-style stewed tomatoes, undrained
    • 1 (16-ounce) can no-salt-added chicken broth
