Spicy Chicken and Rice Recipe

Ingredients

  • ½ cup reduced-fat sour cream
  • ½ cup shredded cheddar cheese
  • 1 can (15 ounces) black beans, rinsed and drained
  • 6 cups cooked brown rice
  • ½ teaspoon ground chipotle pepper
  • ½ teaspoon ground cumin
  • ¾ teaspoon salt
  • + 6 more ingredients
    • 1 teaspoon smoked paprika
    • 1 garlic clove, minced
    • 1 medium onion, chopped
    • 2 medium green peppers, chopped
    • 2 cans (14-½ ounces each) diced tomatoes with mild green chilies, undrained
    • 4 boneless skinless chicken breast halves (6 ounces each)
