Spinach Risotto

Ingredients

• ¹/₃ cup dry white wine
• 1 cup onion
• 2 tablespoons olive oil
• 1 cup long-grain rice
• ½ cup freshly grated Parmesan cheese
• 1 10-ounce package frozen spinach
• 1 teaspoon Pernod
