Steamed Chicken and Vegetables with Soy Dipping Sauce

Ingredients

  • 4 (6-ounce) skinless, boneless chicken breast halves
  • 2 tablespoons mirin (sweet rice wine)
  • 3 cups (2-inch) slices asparagus
  • ¼ cup coarsely chopped fresh cilantro
  • ¼ teaspoon salt
  • ½ teaspoon dark sesame oil
  • ¼ teaspoon black pepper
  • + 3 more ingredients
    • 1 cup halved sugar snap peas
    • ¼ cup low-sodium soy sauce
    • 2 tablespoons rice vinegar

1. Sprinkle chicken with salt and pepper; arrange chicken in a large vegetable steamer. Add water to a large saucepan to a depth of 1 inch; bring to a boil.
