Ingredients

  • 2 teaspoons chili paste or to-ban-jan
  • 1 tablespoon sake
  • 2 teaspoons ginger
  • pepper
  • 4 green onions
  • 2 teaspoons garlic
  • ½ tablespoon rice vinegar

    • 10 ounces boneless chicken thighs with skin
    • small piece ginger
    • 2 tablespoons superfine sugar
    • ¼ cup liquid made up from the juices of the cooked chicken
    • 2 small cucumbers
    • 2 tablespoons green onions
    • 2 tablespoons soy sauce
    • 4 tablespoons sesame paste
    • 2 tablespoons roughly ground sesame seeds
