Ingredients

  • Stilton
  • 1 medium onion
  • 1 teaspoon cornstarch
  • 2 cups chicken broth
  • 18 tablespoons whole milk
  • 2 celery ribs
  • ½ pound cauliflower
  • + 6 more ingredients

    • 1/3 cup crumbled Stilton cheese
    • 1/8 teaspoon salt
    • 3 tablespoons unsalted butter
    • ½ cup light cream or half-and-half

Cook onion, celery, and cauliflower in butter in a 3 1/2- to 4-quart heavy saucepan over moderate heat, stirring occasionally, until onion and celery are softened, 8 to 10 minutes.
