Stir-fried Chicken with Vegetables and Rice

Ingredients

  • ½ cup(s) cashews or peanuts
  • 3 tablespoon(s) soy sauce
  • salt
  • 2 teaspoon(s) cornstarch
  • 2 tablespoon(s) sherry, rice wine, dry white wine, or broth
  • 1 onion
  • 2 carrots
  • + 6 more ingredients
    • 3 tablespoon(s) canola or other neutral oil
    • 1 ½ cup(s) uncooked rice
    • 1 pound(s) boneless, skinless chicken breast
    • ½ pound(s) edible-podded peas (snow peas or sugar snaps)
    • 2 clove(s) garlic, or more, if preferred
    • 1 tablespoon(s) minced fresh ginger (substitute 1 teaspoon dried)

Start the rice : in a saucepan, combine rice, 3 cups water, and 1 teaspoon salt. Bring to a boil, reduce heat to maintain a simmer, and cook, lid ajar, until rice is tender and water absorbed, about 20-25 minutes.
