Ingredients

  • 1 (16-ounce) package Arborio rice
  • 2 tablespoons butter or margarine
  • 1 cup dry white wine
  • 8 cups warm chicken broth
  • 3 tablespoons olive oil, divided
  • 2 garlic cloves, pressed
  • ½ cup shredded Parmesan cheese
  • + 2 more ingredients
    • 1 teaspoon salt
    • 3 large sweet onions, chopped

Cook onions in 2 tablespoons hot oil in a Dutch oven over medium heat, stirring occasionally, 30 to 35 minutes or until caramelized. Remove from pan, and set aside.
