Sweet Potato and Apple Soup

Ingredients

  • ½ teaspoon(s) cayenne pepper - more or less to taste (optional)
  • ½ teaspoon(s) onion powder
  • ½ teaspoon(s) cumin - more or less to taste
  • 3 cup(s) water
  • 1 quart(s) chicken stock or low-sodium broth
  • 2 pound(s) sweet potatoes - peeled and thinly sliced
  • 2 gala apples - seeded and coarsely chopped
  • + 6 more ingredients
    • 1 teaspoon(s) ginger - fresh, finely grated
    • 1 white onion - medium
    • 7 500/1000 ounce(s) chipolte peppers in adobo sauce, whole - chopped
    • 1 celery stalks, thinly sliced crosswise
    • garlic cloves, smashed
    • 2 tablespoon(s) vegetable oil

In a medium soup pot, heat the oil, until simmering. Add the onion, garlic and ginger and cook over low heat. Stir until softened; approximately 7 minutes.
