Sweet Potato and Apple Soup
Ingredients
- ½ teaspoon(s) cayenne pepper - more or less to taste (optional)
- ½ teaspoon(s) onion powder
- ½ teaspoon(s) cumin - more or less to taste
- 3 cup(s) water
- 1 quart(s) chicken stock or low-sodium broth
- 2 pound(s) sweet potatoes - peeled and thinly sliced
- 2 gala apples - seeded and coarsely chopped

- 1 white onion - medium
- 7 500/1000 ounce(s) chipolte peppers in adobo sauce, whole - chopped
- 1 celery stalks, thinly sliced crosswise
- garlic cloves, smashed
- 2 tablespoon(s) vegetable oil
In a medium soup pot, heat the oil, until simmering. Add the onion, garlic and ginger and cook over low heat. Stir until softened; approximately 7 minutes.
