Sweet Potato, Sausage, and Kale Soup

Ingredients

  • 8 cups coarsely chopped peeled sweet potato (about 2 1/4 pounds)
  • 6 garlic cloves, thinly sliced
  • 1 teaspoon salt, divided
  • 1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
  • 2 tablespoons olive oil
  • ½ teaspoon crushed red pepper
  • 5 cups water
  • + 4 more ingredients
    • 4 cups chopped onion (about 2 large)
    • 1 pound sweet turkey Italian sausage
    • 1 (16-ounce) package prewashed torn kale
    • 4 cups fat-free, less-sodium chicken broth
