Tagine of Chicken and Chickpeas
Ingredients
- ½ teaspoon ground turmeric
- 2 cups diced onion (about 2 medium)
- 1 tablespoon olive oil
- 1 pound skinless, boneless chicken thighs (about 4)
- 1 pound skinless, boneless chicken breast halves
- ½ teaspoon ground ginger
- 2 tablespoons chopped fresh cilantro

- 1 (15 1/2-ounce) can chickpeas (garbanzo beans), rinsed and drained
- ¼ teaspoon salt
- 1 teaspoon Hungarian sweet paprika
- 2 cups chopped seeded plum tomato (about 3)
- ¼ teaspoon freshly ground black pepper
Combine first 4 ingredients in a small bowl; rub spice mixture evenly over chicken. Heat oil in a large nonstick skillet over medium-high heat.
