Thai Rice Curry with Herbed Chicken ( Khao Mok Gai )

Ingredients

  • ¼ teaspoon turmeric powder
  • 60 ml coconut milk
  • 1 tablespoon miso paste
  • 1 bay leaf
  • 300 ml (10 fl oz/ 1 1/4 cup) rice vinegar
  • 4 cardamom pods
  • 3 tablespoon chopped coriander
  • + 11 more ingredients
    • 2 garlic cloves
    • 1 tablespoon curry powder
    • 4 chicken breasts
    • 360 g (12 oz) cucumber, peeled, cored and finely chopped
    • 300 g brown jasmine rice
    • 1 cinnamon stick
    • 3 tablespoon soy sauce
    • 1 tablespoon fresh ginger
    • 1 shallot
    • 260 g (9 oz) honey
    • 4 tablespoon finely chopped long red chiles
