Thai Sweet Potato and Peanut Soup

Ingredients

  • 3 tablespoons packed brown sugar
  • 4 cups lower-sodium, fat-free chicken broth

    • 2 pounds sweet potatoes, peeled and cut into chunks
    • 1 onion, chopped, 1 cup
    • 2 cloves garlic, minced
    • 1 tablespoon grated fresh ginger
