  • 1 teaspoon spicy seasoning salt
  • 2-½ cup low salt chicken broth
  • 1 7 ounce curry rice mix
  • 2 tablespoon canola oil

    • 1 seeded yellow pepper cut in 1-1/2 inch chunks
    • 1 seeded red bell pepper cut in 1-1/2 inch chunks
    • 1 seeded orange bell pepper cut in 1-1/2 inch chunks
    • 1 sweet onion
    • 1 tablespoon peanut butter
    • 1 shallot, chopped
    • 2 tablespoon fresh lime juice
    • ¼ cup catsup
    • ¼ cup packed brown sugar
    • ½ cup hot garlic soy sauce
    • 8 boneless, skinless chicken thighs

Gently pound chicken to 1/2-inch thickness. Cut each thigh in half and place in medium glass bowl.
