Thai Thigh Kabobs

Ingredients

  • ½ c hot garlic soy sauce
  • 8 boneless, skinless chicken thighs
  • Chicken
  • ¼ c packed brown sugar
  • ¼ c catsup
  • 2 T fresh lime juice
  • 1 large shallot, chopped
  • + 15 more ingredients
    • 1 T peanut butter
    • 1 large sweet onion
    • 1 large seeded orange bell pepper cut in 1-1/2 inch chunks
    • 1 large seeded red bell pepper cut in 1-1/2 inch chunks
    • 1 large seeded yellow pepper cut in 1-1/2 inch chunks
    • cilantro sprigs
    • lime slices
    • Thai Rice Pilaf
    • 2 T canola oil
    • 1 package 7 ounce curry rice mix
    • 2-½ c low salt chicken broth
    • 1 t spicy seasoning salt
    • 3 T chopped cilantro
    • 2 T fresh lime juice
    • ½ t finely grated lime peel

Gently pound chicken to 1/2-inch thickness. Cut each thigh in half and place in medium glass bowl. In blender container, place hot garlic soy sauce, brown sugar, catsup, lime juice, shallot and peanut butter. Process on high speed until smooth.
