Toasted Barley Salad

Ingredients

  • 1-½ cup Pearl Barley
  • 5 cups Chicken Broth
  • 5 cups Water
  • 6 slices Turkey Bacon, Cut Into ½-inch Pieces
  • 1 Tablespoon Olive Oil, Divided
  • 3 Medium Carrots, Chopped
  • 1 teaspoon Minced Garlic
  • + 5 more ingredients
    • 1 cup Sliced Zucchini
    • 1 cup Mushrooms, Sliced
    • 4 Tablespoons Apple Cider Vinegar
    • ½ cups Fresh Italian Parsley, Chopped
    • Salt And Pepper, to taste

Put barely in a saute pan and toast over medium heat until golden brown. Bring broth and water to a boil. Add toasted barley to the water and cook until tender, about 20 minutes.
