Ingredients

  • 3 tablespoons unsalted butter
  • ½ teaspoon cider vinegar
  • ½ cup whiskey
  • 2 tablespoons shallot
  • 1 2- to 2 1/4-pounds boneless top butt sirloin steak (about 1 inch thick)
  • 1 cup chicken stock or low-sodium chicken broth
  • 2 tablespoons whole-grain mustard
  • + 1 more ingredients
    • 1 tablespoon olive oil

Pat steak dry and sprinkle with 1 teaspoon salt and 3/4 teaspoon pepper.
