Tropical Chicken Stir-Fry

Ingredients

  • ¼ cup toasted peanuts, chopped
  • 4 scallions, chopped
  • 1 mango, finely diced
  • Garnish
  • freshly ground pepper, to taste
  • salt, to taste
  • ¾ cup orange juice
  • + 10 more ingredients
    • 2 teaspoon cornstarch
    • ¾ cup chicken broth
    • ¼ cup chili sauce
    • ¼ cup lime juice
    • 1 onion, quartered
    • 2 red bell peppers, cut into 1/2-inch pieces
    • 3 carrots, julienned or coarsely grated
    • 2 teaspoon peanut oil
    • 1-½ pound boneless, skinless chicken breasts, cut into 1/2-inch chunks
