Tropical Chicken Stir-Fry
Ingredients
- ¼ cup toasted peanuts, chopped
- 4 scallions, chopped
- 1 mango, finely diced
- Garnish
- freshly ground pepper, to taste
- salt, to taste
- ¾ cup orange juice

- ¾ cup chicken broth
- ¼ cup chili sauce
- ¼ cup lime juice
- 1 onion, quartered
- 2 red bell peppers, cut into 1/2-inch pieces
- 3 carrots, julienned or coarsely grated
- 2 teaspoon peanut oil
- 1-½ pound boneless, skinless chicken breasts, cut into 1/2-inch chunks
