Tuna with White Beans and Sun-Dried Tomato Sauce

  • ½ cup carrot
  • 5 teaspoons fresh thyme or 2 teaspoons dried
  • 7 tablespoons olive oil
  • ½ cup onion
  • ½ cup celery
  • Sun-dried Tomato Sauce
  • 1 tablespoon grated lemon peel
  • + 3 more ingredients
    • 4 6- to 8-ounce ahi tuna steaks (each about 3/4 to 1 inch thick)
    • 1 cup dried Great Northern beans
    • 5 cups chicken stock or canned low-salt chicken broth

Place beans in medium bowl. Add enough cold water to cover beans by 3 inches. Let stand overnight. Drain. Combine beans and stock in large saucepan. Bring to boil.
