Tunisian Chicken Couscous
Ingredients
- Cilantro, swiss chard leaves and red bell pepper, for garnish
- 3 tablespoon vegetable oil
- 2 tablespoon minced cilantro
- 1 ½ cup boiling chicken broth
- 1 cup whole wheat couscous
- 1 ½ tablespoon jarred harissa
- ¼ cup golden raisins

- 1/3 cup diced red bell pepper
- 3 cup thinly sliced swiss chard leaves
- 2 teaspoon minced garlic
- 1 tablespoon olive oil
- 3 tablespoon sliced, blanched almonds
- Harissa and Chard Couscous:
- 4 boneless, skinless chicken breast halves, about 6 ounces each
- 1/3 cup flour
- 1 teaspoon kosher salt
- ¼ teaspoon fine ground black pepper
- ½ teaspoon ground cayenne pepper
- 2 teaspoon ground coriander
- 2 ½ teaspoon sweet smoked paprika
- 1 teaspoon ground cinnamon
- 2 ½ teaspoon ground cumin
- Charmoula:
To make the charmoula, place the cumin, cinnamon, paprika, coriander, cayenne, black pepper, salt and flour in a large, food-safe, sealable plastic bag and toss to combine.
