Tunisian Chicken Couscous

Ingredients

  • Cilantro, swiss chard leaves and red bell pepper, for garnish
  • 3 tablespoon vegetable oil
  • 2 tablespoon minced cilantro
  • 1 ½ cup boiling chicken broth
  • 1 cup whole wheat couscous
  • 1 ½ tablespoon jarred harissa
  • ¼ cup golden raisins

    • ¼ cup apple cider
    • 1/3 cup diced red bell pepper
    • 3 cup thinly sliced swiss chard leaves
    • 2 teaspoon minced garlic
    • 1 tablespoon olive oil
    • 3 tablespoon sliced, blanched almonds
    • Harissa and Chard Couscous:
    • 4 boneless, skinless chicken breast halves, about 6 ounces each
    • 1/3 cup flour
    • 1 teaspoon kosher salt
    • ¼ teaspoon fine ground black pepper
    • ½ teaspoon ground cayenne pepper
    • 2 teaspoon ground coriander
    • 2 ½ teaspoon sweet smoked paprika
    • 1 teaspoon ground cinnamon
    • 2 ½ teaspoon ground cumin
    • Charmoula:

To make the charmoula, place the cumin, cinnamon, paprika, coriander, cayenne, black pepper, salt and flour in a large, food-safe, sealable plastic bag and toss to combine.
