Tunisian Chicken Summer Rolls with Mint-Garlic Yogurt Sauce

  • 15 round rice paper spring roll wrappers
  • 2 T extra virgin olive oil
  • ¼ c fresh cilantro leaves and stems, chopped
  • ¼ c dates, pitted and finely chopped
  • ¼ c golden raisins
  • 1 c English cucumber, julienned
  • + 19 more ingredients
    • 1 c carrot, julienned
    • 1 c red pepper, julienned
    • Freshly ground black pepper
    • Kosher Salt
    • ¼ c low sodium chicken stock
    • 1/8 t ground allspice
    • ¼ t cayenne pepper
    • ½ t ground cinnamon
    • ½ t ground coriander
    • ½ t ground cumin
    • 2 clove garlic, finely chopped
    • 1 lb ground chicken thighs
    • 2 T extra virgin olive oil
    • Tunisian Chicken:
    • 2 T fresh mint leaves, finely minced
    • 2 clove garlic, finely minced (or pressed through a garlic press)
    • 3 T lemon juice
    • 1 ½ c plain yogurt (preferably Greek style yogurt)
    • Mint Garlic Yogurt Sauce:

To prepare Mint-Garlic Yogurt Sauce, in a small mixing bowl, combine yogurt, lemon juice, garlic, and dill; stir to combine. Refrigerate until serving.
