Tunisian Fish-and-Vegetable Stew
Ingredients
- 2 tablespoons cooking oil
- 3 tablespoons tomato paste
- 1 onion, chopped
- 2 zucchini, cut into 1-inch pieces
- 1 quart canned low-sodium chicken broth or homemade stock
- 1 turnip, peeled and cut into 1-inch pieces
- 1 ½ pounds cod fillets, cut into 1 1/2-inch chunks

- ¼ teaspoon dried red-pepper flakes
- 4 cloves garlic, cut into thin slices
- ½ teaspoon fresh-ground black pepper
- ¾ pound boiling potatoes (about 2), peeled and cut into 1-inch pieces
- 1 ½ teaspoons cumin
- 3 carrots, cut into 1-inch pieces
