Ingredients

  • 1 (2-pound) head green cabbage
  • rice
  • 3 cloves garlic
  • 3 tablespoon red-wine vinegar
  • 1 (28-ounce) can whole tomatoes in juice
  • 2 tablespoon fresh flat-leaf parsley
  • 1/3 cup dried cranberries

    • 1 tablespoon packed dark brown sugar
    • 1 large onion
    • ½ pound ground pork
    • ½ cup chicken stock or low-sodium chicken broth
    • ½ pound ground beef chuck

Place cabbage in a deep 12-inch heavy skillet with broth, 1 garlic clove (sliced), and a rounded 1/4 teaspoon salt.
